Vegan Christmas Yule Log

This Vegan Chocolate Yule Log is moist, deliciously gooey and the perfect take on a christmas classic. 

The Perfect Holiday Cake. You dont think I could let christmas go by without making a christmas yule log did you? Chocolate yule logs remind me so much of my childhood. I remember Christmas day evening having a big slice with a cup of tea! 

This variation uses dates and maple syrup as a natural sweetener, and a base of ground almonds. Trust me though it is just as delicious. 

Ingredients (serves 12) 
1 cup dates (soaked in warm water until soft) Keep the water for the frosting
1 cup ground almonds 
1 cup buckwheat flour 
3/4 cup cacao powder
4 tbsp maple syrup 
1 tbsp coconut oil
pinch of sea salt
1/2 cup hazlenuts

Chocolate Frosting
1 tbsp coconut oil 
4 tbsp cacao powder
1 scoop chocolate protein powder
1/2 cup cashews
2 tbsp hazlenut butter
1/2 cup water ( use the leftover date water to add extra sweetness)

Add all the cake ingredients together expect the hazlenuts into a food processor and blend until the mixture has come together. Add the hazlenuts and pulse a few times. 

Tip the mixture on to a peice of baking/parchment paper. Place another peice of baking paper over the top and roll the mixture out into a large rectangle 6mm thick. 

Add all the fristing ingredients into a blender and blend until you have a thick creamy texture. Remove the top peice of parchment paper and spoon on half the filling mixture, spreading evenly, before rolling into a log. Spoon the rest of the filling on the top of the log and dust with cacao powder. Place in the fridge to firm up and then slice and serve.
