Sweet Potato & Lentil Dahl.

There is nothing I love more than a warming, nourishing, flavoursome meal that feels like ultimate comfort food. Hello curry. 

This lentil, sweet potato and coconut curry is a great option for everyone. Although it is vegan, it can still be enjoyed by everyone, including kids. (It passed the taste test with my friends kid) It is also a great option for students eating on a budget as its costs around 67p per portion, and freezes well plus it only takes 10 minutes prep time. 

Ingredients (Serves 6) Vegan and Vegetarian friendly
  • 1 Sweet potato cut into small chunks
  • 1 Onion, thinly sliced, 
  • 2 cloves of garlic
  • 1 cup red lentils
  • 1 can chopped tomatoes
  • 1 can coconut milk
  • 1 tsp curry powder
  • 1 tsp ground cumin
  • 1tsp ground ginger
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • Salt & Pepper
  • Big bunch of coriander
Method:
1) Fry onion and garlic in coconut oil until soft.
2) Add all the spices, dried lentils, coconut milk, chopped tomatoes, sweet potato chunks. Once everything is mixed in, turn down the heat, put the lid on and allow it to cook for around 45 minutes (until the sweet potato and lentils are soft and everything tastes delicious. 
3) Finally add the chopped coriander and serve with soft naan bread, brown rice & broccoli. 

All the ingredients are available from any supermarket, so this is accessible to everyone and a perfect dinner party or family meal.
