Is there anything better than starting the weekend with a giant stack of sticky toffee pancakes? 

This simple pancake recipe serves two or one if you are hungry (which is often me), but you could easily double and have extras for the next day. They re heat really well. 

Here is what you will need: 

1 banana mashed
1 cup jumbo oats
2 scoop protein powder ( or 2 tbsp ground flaxseeds or hemp seeds) I used form nutrition toffee protein. 
1 teaspoon baking powder
1 cup non dairy milk 
Pinch of salt.

I simply throw all the ingredients into my nutri bullet, heat some coconut oil in a non stick pan and pour 2 tbsp batter per pancake. 

I topped mine with fresh figs (which taste so good when in season) and nut butter! YUM
