Spicy Harissa, chickpea and tomato Stew

Finding the motivation to come up with new and exciting recipes for dinner every night can be a challenge, which is why I have cupboard staples an 'go to' meals that I know will never let me down. This is my throw it all in the pan or slow cooker chickpea and Harissa stew. It has got a kick of spice and each mouthful is full of warm comforting flavours from the tomatoes and chilli. This recipe serves two - four and can be eaten as a simple one pot dish or pilled on top of a sweet potato jacket.

Ingredients
1 large onion, thinly sliced
3 cloves garlic, crushed
1 red pepper, chopped
1 can chickpeas, drained & rinsed
1 tin chopped tomatoes
1 tbsp Harrisa paste
1 tbsp. Tomato purée
1 tsp red chilli powder
Salt & pepper
1 tsp honey
Frozen spinach


Method
1.Sautée the onion and garlic until softened.
2. Add the red pepper, spices, Harissa paste, chopped tomatoes, chickpeas and tomatoes purée)
3.Reduce the heat and let simmer for 10 minutes.
4.Add a couple handfuls of frozen spinach or 2 cups fresh spinach.
5. Serve with fresh coriander and a side of quinoa or brown rice
