Gingerbread Granola

Granola is one of my favourite breakfasts and something that I alway have in my cupboards. I love that you can take a basic recipe, but adapt it to what you have got in your cupboards. As long as you have the main ingredients: oats, honey, coconut oil and nut butter you can pretty much free style the rest. 

I personally love adding nuts and seeds as they are high in essential nutrients such as zinc ( the master gland of the immune system) and coconut & ginger that have numerous health benefits. Granola is a great way to get a fibre rich breakfast first thing in the morning and support those gut bacteria. 

Ingredients
3 cups rolled oats
1 cup chopped nuts (pecans, walnuts, cashews)
1/3 cup mixed seeds ( pumpkin, sesame, sunflower)
1/3 cup desiccated coconut
3 tbsp buckwheat
2 tsp. ground ginger
1/3 cup melted coconut oil
1/3 cup maple syrup
2 tbsp @nutcessity gingerbread almond

Method
1. Preheat the oven to 180 and line a baking tray with parchment paper.
2.Start by melting the coconut oil, maple syrup & almond butter together.
3. Combine all dry ingredients together into a bowl and pour the coconut oil mixture over the dry ingredients. 
4. Spread out evenly onto a baking tray and bake for 20 minutes. Remove and then turn/stir and cook until golden. 
5. Remove from the oven. This is where you can add dried fruit if you want :) 
6. Store in an airtight container for up to two weeks. 

I love having mine with coconut yogurt and fresh berries :)
