Banana pancakes are my favourite lazy weekend breakfast. I love topping them with yogurt, chocolate sauce and fresh berries.
** To make oat flour you literally just blend oats. Most people will have oats in their kitchen which is why this is a good cupboard staple breakfast. If you don't have cacao powder you could use coco powder instead, or peanut butter instead of almond butter. If you are vegan you can swap the eggs for soaked chia seeds ( 2 tbsp. chia seeds + 4 tbsp water)
Ingredients (serves 2 )
- 2 eggs
- 1 very ripe banana
- 1 cup oat flour
- 1 tbsp. almond butter
- 2 tbsp cacao powder
- 1tsp. baking powder
- 1/2 cup oat milk
- 1tbsp. coconut oil
- 1 tbsp. maple syrup
- 1 tbsp. cacao powder
1. Add all the pancake ingredients into a blender & blend until you get a smooth consistency.
2. Heat a non stick pan ( not to hot) and spoon on the mixture. Once you start to see a few bubbles, flip them over.
3. Melt the coconut oil, maple syrup and cacao powder in a saucepan on a low heat.
4. Once your pancakes are all cooked and nice and fluffy, transfer onto a plate, layer with banana, coconut and hot chocolate sauce.
