Dark Chocolate Almond Butter Cups

These dark chocolate almond butter cups are a delicious healthy alternative to shop bought peanut butter cups. 

Trust me, once you try making these, you will never go back to shop bought ones. I like to have these to hand for those moments when only chocolate will do. 

I also love the face that I can control the chocolate to almond butter ratio. 

INGREDIENTS 
(makes 12 cups)
14oz 70%+ Dark Chocolate
2 tbsp. Coconut Oil 
1/2 cup Almond Butter
3 tbsp. Shredded Coconut
1 tbsp. Maple Syrup 
1/4 tsp. Salt

INSTURCTIONS
1. Line a muffin tin with Cases.
2. Melt the dark chocolate and coconut oil in a pan o a low heat.
3. Once the chocolate is melted, spoon 1tbsp of chocolate to line the bottom of the muffin case. Pop in the freezer for 10 minutes. 
4. Mix the almond butter, coconut, maple syrup and salt together, and scoop a small spoon full into each mould. 
5. Spoon the remaining chocolate mixture on to the mould to cover the almond butter layer. Place back in the freezer for 15 minutes. 

**Store in the fridge to keep fresh.
