Chia Seed Pudding

Chia seeds are little powerhouses. They contain all the essential amino acids (the building blocks for protein). Not only are they high in protein, but they are also rich in Calcium, Zinc, Magnesium, Iron and B vitamins. Chia seeds contain x 8 the amount of Omega 3 than salmon, twice as much Calcium as milk and four times the amount of Iron than spinach.


Ingredients:

  • 4 tbsp. chia seeds
  • 2 tbsp. coconut yogurt
  • 1 tbsp. maple syrup
  • 1/3 cup oat milk.

Topping

  • Almond butter
  • Sliced bananas


Method:

1.Place the chia seeds, maple syrup and yogurt into a bowl or jar and pour over the milk.

2. Stir everything together and cover. Pop in the fridge overnight. During the night the liquid will have been absorbed and you will be left with a thick pudding consistency.

3. In the morning top with nut butter, fruit and a drizzle of maple syrup.
