Blackberry Breakfast Crumble

It is blackberry season!! How amazing is this time of year? 

I feel very lucky because right by where I live, there are bushes and bushes of fresh blackberries. So the other day I took my containers and spent a good few hours down there. I had so many delicious blackberrys that I was thinking 'what can I make' and of course a crumble is always a good idea. However, this is not a typical crumble. Made with oats, buckwheat and fresh berries it doubles up as a great nutrious breakfast or snack.

500g berries (blackberries, raspberries, strawberry’s)

½ cup ground oats

½ cup buckwheat flour

1 tbsp. thick rolled oats

1 tbsp. buckwheat

2 tbsp. coconut oil

1 tbsp. maple syrup

2 tsp. cinnamon



1.Place all the berries in a saucepan with a dash of water and a sprinkle of cinnamon.

2. Meanwhile add the oats, flour, buckwheat and mixed seeds into a bowl. Add the coconut oil and maple syrup and using your hands combine, until it resembles bread crumbs.

3. Pour the berries into an ovenproof dish. Top with the crumble mixture and pop in the oven for 40 minutes until crispy.

4. Serve with coconut yogurt for a tasty breakfast, snack. or dessert
