Banana, Orange and Courgette Breakfast Loaf

This was an 'accidental cake' that turned out absolutely delicious. I literally added a bit of this and a bit of that - which is my favourite way to bake - using up whatever I have in the fridge.

Ingredients 
1 1/2 cup buckwheat flour
1/2 cup coconut flour
2 tsp baking powder
2 tsp cinnamon
A pinch of salt
40 ml olive oil
3 eggs
2 extra ripe bananas
1 tbsp honey (optional)
1 carrot, grated
1/2 courgette. grated
50g walnuts

Toppers
1/2 cup sugared orange peel
- Method - 
  1. Preheat the oven to 180'c 
  2. In a large mixing bowl combine all the dry ingredients (buckwheat, coconut flour baking powder, cinnamon and salt)
  3. In a separate bowl, whisk together the wet ingredients (olive oil, honey & eggs) and then add in the bananas, courgette, carrot, and walnuts) Fold in the dry mixture
  4. Line a loaf tin with baking paper, then pour in the cake mixture. Top with sugared orange peel, or sliced bananas. 
  5. Pop in the oven for 50-60 minutes, until cooked through. Allow to cool for 5 minutes in the tin before lifting out with the baking paper and transferring to a wire rack to cool completely.
