SWEET POTATO

Sweet potatoes are a starchy root vegetable, rich in fibre, and essential vitamins and minerals including:  Iron, Calcium, Selenium, B Vitamins and Vitamin C. One of the key nutritional benefits of sweet potato is that they contain high amounts of an antioxidant called Beta-carotene, that gets converted into Vitamin A once consumed.

The high fibre and magnesium content has been shown to promote a healthy digestive system, and support good gut health. Sweet potatoes are also an excellent Immune system booster and anti-inflammatory due to the richness in minerals and vitamins. They are also a slow releasing carbohydrate so help in the management of blood sugar levels. 

I personally find sweet potatoes so versatile and love using them in both sweet and savoury dishes.

1.   SWEET POTATO & LENTIL CURRY

This curry is full of incredibly nourishing ingredients. Each bite tastes so delicious with big chunks of sweet potato and lentils cooked in creamy coconut milk and juicy tomatoes, flavoured with a blend of ginger, cumin and turmeric. Its a perfect Immune boosting meal.

2.  SWEET POTATO, GINGER & COCONUT SOUP

 Ingredients: 1 onion, 1 large sweet potato, 3 carrots, 1 thumb of ginger peeled, ground ginger, 1/2 pint of vegetable stock, 1 tin of coconut milk. Method: Roughly chop the onion, and fry in coconut oil. Peel the carrots and sweet potato and chop into large chunks. Add to the pan with the vegetable stock & ginger. Bring the pan to simmer until veggies are soft ( around 20 minutes). Once cooled, blend to a smooth consistency. Top with mixed seeds and feta.

3.   SWEET POTATO & CACAO SMOOTHIE

Chocolatey heaven - tastes like dessert but can be eaten for breakfast, lunch or dinner.

4.   SWEET POTATO GNOCCHI

This is a perfect quick mid week meal that the whole family can enjoy. I love adding pesto and fresh spinach to mine.

5.   SWEET POTATO & SPINACH PANCAKE

Ingredients 1/4 cup cooked sweet potato, 1 tbsp gram flour, 1 egg, handful of spinach, 1 tsp baking powder, salt & pepper. Method: Mix all ingredients together and then spoon the batter on to a hot frying pan and bake for 5 minutes of each side. This makes one large pancake. Top with smashed avocado & feta.

6.   SWEET POTATO & FETA MUFFINS

Lunch does't get much simpler than these sweet potato and feta muffins. These muffins are great either hot or cold, on their own or with a big dollop of hummus.

8.   SWEET POTATO , CHICKPEA & PESTO TRAY BAKE

Ingredients: 1 large sweet potato, 1 red pepper, 1 tin of chickpeas drained and rinsed, 1 cup of cherry tomatoes, 2 tbsp Pesto.  Method: Cut the sweet potato into cubes, drizzle with olive oil, salt and bake for 20 minutes. Remove from oven and add the red peppers, chickpeas and cherry tomatoes. Bake for a further 20 minutes. Remove and add 2 cups of spinach, and 2 tbsp of pesto. Pop back in the oven and bake for a further 5-10 minutes until everything is soft and caramelised. 

9.   SWEET POTATO PIZZA BASE

Ingredients: 1 small/ medium size sweet potato, 1/2 cup chickpea flour, 1 tsp baking powder, 2 tbsp Italian herbs, salt. Method: Peel sweet potato and cut into large chunks. Steam for 15-20 minutes until soft. Mash the sweet potato with a fork and add the chickpea flour, baking powder, salt and 1 tbsp of herbs. Leave the mixture for 15 minutes in the fridge. Pre-heat the oven to 180, and line a baking tray with parchment paper. Remove the dough and roll out ( you may have to press down with your hands. Bake for 10 minutes. Remove then cover with tomato puree, mixed herbs and any toppings you wish. My favourite is caramelised red onions & goats cheese. 

10. SWEET POTATO, MISO & COCONUT STEW - 

This stew is full of nourishing ingredients, with huge flavour, warming spices, comforting chunks of sweet potato & butterbeans all cooked in creamy coconut milk. Not only is it wholesome, delicious but for 2 portions it costs less than £5.
